Sauce: 8 generous spoons of cream, 1 spoon of mustard, 2 spoons of cider vinigar, salt, pepper. To make the vinaigrette: put the vinegar, salt, pepper and mustard into a bowl. Mix. Add the cream. Check that it is seasoned to taste. Put the salad mix onto eight plates. Put three tomato quarters around the edge of the plates. Add the chopped vegetables and sprinkle with chopped shallot. Heat some oil in a pan. Put the salmon goujonettes into the boiling oil and fry without stirring too much. Season with salt and pepper.
